This bottom-fermenting yeast strain, isolated from Mexico City, is perfect for producing crisp lagers with a notably clean profile. It allows for a balanced expression of malt and hop flavours, resulting in a well-rounded profile with excellent drinkability and a dry finish. It performs efficiently at the lower end of the larger fermentation temperature range, ensuring complete attenuation and little to no residual sugars in the beer giving a crisp, dry finish and a clean aftertaste.
With its high flocculation, this strain settles out of suspension effectively, producing a bright, clear beer with no yeast haze. Additionally, this strain has a low tendency to produce sulphur compounds, reducing the risk of unpleasant aromas often associated with some lager yeasts.
Ideal for American and European-style lagers, this yeast also excels in crafting light lager styles from Asia and Australia, as well as the latest innovative India Pale Lagers. Its adaptability makes it especially well-suited for adjunct-based and rice lagers, performing consistently across various adjunct levels. This versatility makes it an excellent choice for fermenting a wide range of lager styles.
