How It Works: Enzymatic Starch Breakdown
Alpha-amylases break down large, insoluble polysaccharides (amylose and amylopectin) into soluble dextrins and oligosaccharides by hydrolysing internal α-1,4 glycosidic bonds in starch during mashing. This improved liquefaction enhances mixing, heat transfer, and lautering performance, resulting in smoother wort flow and faster runoff, particularly beneficial in high-adjunct or high-gravity brews.
